Mix all of the ingredients together with a whisk in a microwave-safe bowl.
Microwave on HIGH for 4 minutes. Stir gently to help form the curd. Let stand for 10 minutes.
Gently lift the curds (solids) out of the whey (liquids) and place in a cheesecloth or cheese-bag-lined strainer. Drain for 5 minutes, until you reach the desired consistency.
Remove the drained ricotta to a bowl or container for storage.
