My Microwave Ricotta recipe is a quick and easy method for having fresh and delicious homemade ricotta ready to use -  in minutes.

Ingredients
  

  • 2 cups whole milk
  • 1/3 cup plain Greek yogurt
  • 2 teaspoons fresh lemon juice
  • 1/8 teaspoon Kosher salt

Instructions
 

  • Mix all of the ingredients together with a whisk in a microwave-safe bowl.
  • Microwave on HIGH for 4 minutes. Stir gently to help form the curd. Let stand for 10 minutes.
  • Gently lift the curds (solids) out of the whey (liquids) and place in a cheesecloth or cheese-bag-lined strainer. Drain for 5 minutes, until you reach the desired consistency.
  • Remove the drained ricotta to a bowl or container for storage.
