  • 1 cupfresh lemon juice
  • 1/2 cupsugar
  • 1 fresh rosemary sprig
  • 2 fresh rosemary sprigs
  • Prosecco or sparkling water
  • pomegranate arils

Instructions

    Combine lemon juice and sugar in a small saucepan. Bring to a boil, occasionally stirring to help dissolve the sugar. Reduce the heat to a simmer and add in a sprig of rosemary. Simmer for to thicken slightly.

    Remove the mixture from heat and cool; leave the rosemary in the mix.

    Pour a shot of the rosemary lemon syrup in the bottom of a cocktail shaker. Pour in a shot of pomegranate juice. Fill the shaker with ice and shake until the shaker feels very cold.

    Pour the mixture in a martini glass and top off the drink with Prosecco or sparkling water.

    Garnish with pomegranate arils and a sprig of rosemary.
