I've spent my life on food that heals. Born in northern Minnesota to an Italian-American family, I learned pasta-making from my grandmother and have traveled the Mediterranean extensively and studied traditional techniques. I founded Bonicelli Cooking Club to make the Mediterranean lifestyle accessible, joyful, and sustainable for every woman at every stage of life.

My Story

I built this program for myself first.

I'd gained a lot of weight. Not suddenly — over years, the way it usually happens. And I just didn't feel good. I was a professional chef who'd spent a decade helping other people eat their way back to health, and I wasn't doing it for myself.

So I started testing. The ratio came out of my own kitchen, cooking my own dinners, paying attention to what actually held up over months instead of weeks.

The weight came off, slowly and steadily. But that was the least interesting part. My energy came back. My skin changed. I slept better. My numbers at the doctor moved in the right direction. I felt like myself again.

I want to be clear about this: Mindful Mediterranean isn't a weight-loss program. Weight loss happens for some people — but not if it doesn't need to. What everybody gets is the other list. The energy, the sleep, the feeling of being at home in your own kitchen and your own body.

Professional Background

For over ten years I ran a meal delivery service, and much of that work was clinical. I worked with dietitians and nutritionists whose clients were managing their health, and with people rebuilding after serious illness. Sometimes I was handed a protocol and cooked to it. Sometimes we built the food plan together. Either way, I learned that what people can actually stick with matters more than what's technically optimal.

That work led somewhere I didn't expect. A dietitian working with two of Minnesota's professional teams brought me in to present at a training facility, and players started calling directly. Word spread. For a few years I was cooking for professional athletes, and the lesson was the same as it had been with my recovery clients: the food has to be worth eating, or nobody eats it twice.

The Formula

The whole program is one ratio.

I sort food into two groups. I call them MM-Green and MM-Blue.

MM-Green

Two meals a day plus your snacks come from Green.

MM-Blue

The third meal is Blue.

That's it. That's the formula.

There's no counting, no eliminating, no list of foods you've failed at. Nothing is off the table — pasta isn't banned, bread isn't banned, dessert isn't banned. You're not giving things up. You're changing the proportion of one kind of eating to another, and letting that do the work.

I teach you which foods sit where and, more importantly, how to cook the Green ones so well that you stop thinking of them as the compromise.
