Ingredients
- 2 cupscubed cooked chicken breast
- 1 red apple (such as Fugi or Braeburn -- cored and diced)
- 1/2 cupthinly sliced celery
- 1/4 cupminced shallot
dressing
- 1 zested lime
- 2 tablespoonsfresh lime juice
- 2 tablespoonswhite wine vinegar
- 1 teaspooncurry powder
- 2 tablespoonsminced cilantro
- 3/4 teaspoonKosher salt
Instructions

Combine chicken, apple, celery, and shallot in a medium-sized bowl.

To make the dressing, whisk the zest, lime juice, vinegar, curry powder, cilantro, and Kosher salt in a small bowl.

Pour the dressing over the chicken mixture. Toss to combine. Let the mixture sit for 10 minutes, stirring several times. Divide between four plates and serve.
