
Asparagus Bundles
An easy dish to prepare ahead and pop in the oven right before serving.

Ingredients
- 24 asparagus spears
- 1/3 poundpiece Emmentaler (cut into 16 strips)
- Kosher salt and freshly ground black pepper
- 3 tablespoonsextra-virgin olive oil
- 8 slicesprosciutto
- good-quality balsamic vinegar

Preheat oven to 400º F.

To make the asparagus a uniform length, cut woody ends of asparagus off and discard or set aside for later use. (A good recipe for them is roasted asparagus pate.)

Put spears in a bowl and toss with salt, pepper, and olive oil.

Coat a 9x13-inch baking dish with cooking spray.

Lay down a piece of prosciutto on a work-surface. Lay three asparagus spears on top crosswise, and top with two strips of cheese placed in the same direction as the asparagus. Wrap the prosciutto around the spears and cheese to make a bundle.

Place the bundle in the baking dish and repeat the process with the remaining ingredients.

Bake for 15 to 20 minutes, until spears are cooked through, prosciutto is crisp, and cheese melts.

Serve on a platter or individually. Drizzle with balsamic right before serving.
