Ingredients

- 2 large eggs (beaten)
- 2 teaspoonstoasted sesame oil
- 3 cupsriced cauliflower (rice by pulsing florets in a food processor until granular)

- 1 poundlarge shrimp (peeled and deveined)
- 2 tablespoonstoasted sesame oil
- 3 cupspurple cauliflower or broccoli florets
- 1 medium red bell pepper (thinly sliced)
- 3 clovesgarlic (sliced)
- 6 scallions (sliced, white, and light green parts)
- 3 tablespoonsreduced-sodium tamari (can be gluten-free)
- 2 tablespoonswater
- 1 tablespoonrice wine vinegar
- 1 tablespoonbrown rice miso
- 1/2 teaspoonfreshly ground black pepper
- 1/4 cupchopped peanuts
