Ingredients
dressing
- 1/3 cupsilken tofu
- 1 teaspoonlemon zest
- 2 tablespoonslemon juice
- 2 tablespoonsrice wine vinegar
- 1 clovegarlic (minced)
- 1 teaspoonDijon mustard
- 1/4 teaspoonKosher salt
- 1/4 teaspoonfreshly ground black pepper
- 2 cupscubed cooked skinless boneless chicken breast
- 2 cupshalved red seedless grapes
- 2 celery stalks (sliced)
- 6 cupsmixed greens
- 1/4 cupthinly sliced red onion
- 1 teaspooncrushed cumin seeds

Combine all of the dressing ingredients in a blender. Blend until smooth.

Toss the chicken, grapes, and celery in a medium-sized bowl.

Divide the greens between four plates. Top with the chicken mixture and drizzle with dressing. Top with red onion and sprinkle with cumin seeds.
