- 4 cupscanned or cooked garbanzo beans (chickpeas)
- 1/2 cuptahini
- 1/3 cupwarm water
- 1/2 Cupextra-virgin olive oil
- 1 lemon (juiced)
- 3 clovesgarlic
- 1 1/2 teaspoonsKosher salt
- 2 teaspoonsground cumin

Combine garbanzo beans, tahini, warm water, olive oil, and juice of 1 lemon in the bowl of a food processor fitted with a steel blade. Process until smooth and creamy, pausing once or twice to scrape down the sides of the bowl with a spatula.

Add garlic, salt, cumin, and pepper; process to blend. Taste and correct the seasonings, if necessary. Add more lemon juice to taste. Scrape into a storage container, cover, and refrigerate until ready to use.
