  • 1 cupchopped bell pepper
  • 2 cupsfresh baby spinach
  • 2 largeeggs (lightly beaten)
  • Kosher salt and freshly ground black pepper -- to taste
  • 1/4 cupcrumbled queso blanco cheese
  • 2 8 -inchwhole wheat tortillas
  • 2 teaspoonscanola oil
