
Fabulous Breakfast Quesadilla
A Fabulous Breakfast Quesadilla is a great way to start your day. If you have some salsa on hand, that's lovely on the side.

Ingredients
- 1 teaspooncanola oil
- 1 cupchopped bell pepper
- 2 cupsfresh baby spinach
- 2 largeeggs (lightly beaten)
- Kosher salt and freshly ground black pepper -- to taste
- 1/4 cupcrumbled queso blanco cheese
- 2 8 -inchwhole wheat tortillas
- 2 teaspoonscanola oil
Instructions

Heat 1 teaspoon of oil in a medium-sized non-stick skillet over medium-high heat. Add the pepper; cook occasionally stirring, until tender, 5 minutes. Add the spinach and cook until wilted, 1 minute. Pour eggs over the mixture and season with salt and pepper.

Scramble the eggs until set. Sprinkle with cheese and place the eggs on one tortilla and top with the other.

Heat 2 teaspoons of oil in the same skillet over medium heat. Add the tortilla sandwich with the eggs in the middle to the pan. Cook for 2 minutes until crisp on the bottom. Flip and cook for an additional 2 to 3 minutes.

Cut into four pieces and serve immediately. Each serving is two pieces.
