Ingredients
- 1 cupwarm water
- 3/4 cupchickpea flour
- 1/4 tsp.Kosher salt
- 3 tablespoonsolive oil
- coarse sea salt

Pour water into a bowl and whisk in chickpea flour (slowly) until smooth. Let stand for 1 to 2 hours. Before cooking, spoon foam off of the top of the mixture and discard. Stir in the kosher salt.

Heat oven to 500º F. Heat a 9-inch cast-iron skillet in the hot oven for 10 minutes. Remove the skillet and add two tablespoons of olive oil, tip to coat bottom, and up the sides. Pour in batter, tipping the pan to cover bottom (1/4 inch thick). Bake until crisp around the edges and golden on top. 20 to 25 minutes.

Sprinkle with coarse sea salt.
