Ingredients

  • 1/2 cupred lettuce (torn)
  • 1/2 cupdiced cucumber
  • 6 cherry tomatoes (halved)
  • 1/2 cupcanned chickpeas (rinsed and drained)
  • 1 hard-boiled egg (peeled and halved)
  • Kosher salt and freshly ground black pepper
  • 1 tablespoonbalsamic vinegar

Instructions

    Arrange the lettuce, cucumber, tomatoes, chickpeas, and egg on a salad plate. Sprinkle with salt and pepper and drizzle with balsamic vinegar. Serve.
