  • 1/3 cupextra-virgin olive oil

  • 1/2 cupdry white wine
  • 2 tablespoonsunsalted butter
  • 1/4 cupchopped fresh Italian parsley
  • 2 teaspoonsgrated lemon zest
  • 1 tablespoonfresh lemon juice
  • 1 poundpasta
  • freshly ground black pepper

    Peel and devein the shrimp, leaving the tail in placeóReserve the shells. Toss the shrimp in a bowl with minced garlic, 2 tablespoons of olive oil, and one teaspoon salt. Set aside. Cook the pasta according to package directions.

    Wheal the pasta is cooking: In a large skillet over medium-high heat, heat 1/3 cup of olive oil with the smashed garlic cloves and shrimp shells. Reduce heat when bubbling to a simmeróCook and stir for . Strain the oil through a fine-mesh strainer into a heat-proof bowl. Discard the shells and garlic.

    Return the oil to the skillet and heat over high heat until shimmering. Add the sliced garlic and pepper flakes and cook until the garlic begins to turn pale brown, about .
