Ingredients
- 1 poundlarge shrimp
- 2 clovesgarlic -- minced
- 2 tablespoonsolive oil
- 1 teaspoonKosher salt
- 1/3 cupextra-virgin olive oil
- 6 clovesgarlic -- peeled and smashed

- 1/2 cupdry white wine
- 2 tablespoonsunsalted butter
- 1/4 cupchopped fresh Italian parsley
- 2 teaspoonsgrated lemon zest
- 1 tablespoonfresh lemon juice
- 1 poundpasta

Peel and devein the shrimp, leaving the tail in placeóReserve the shells. Toss the shrimp in a bowl with minced garlic, 2 tablespoons of olive oil, and one teaspoon salt. Set aside. Cook the pasta according to package directions.

Wheal the pasta is cooking: In a large skillet over medium-high heat, heat 1/3 cup of olive oil with the smashed garlic cloves and shrimp shells. Reduce heat when bubbling to a simmeróCook and stir for 5 minutes. Strain the oil through a fine-mesh strainer into a heat-proof bowl. Discard the shells and garlic.

Return the oil to the skillet and heat over high heat until shimmering. Add the sliced garlic and pepper flakes and cook until the garlic begins to turn pale brown, about 1 minute. Add the shrimp and cook, stirring until slightly pink, about 45 seconds. Add the wine and cook until shrimp cook through. Remove from heat, add the butter, parsley, lemon zest, and juice and stir to combine.

Divide pasta between four pasta bowls. Top with shrimp and its sauce. Garnish generously with freshly ground black pepper and serve.
