This is one of my favorite ways to cook salmon. The recipe stands alone, or you can add a sauce.

  • 1 teaspoonbrown sugar
  • 1/2 teaspoonKosher salt
  • 1/4 teaspooncornstarch
  • 2 teaspoonscanola oil
  • 4 6- ouncesalmon filets (skin-on)

Instructions

    Preheat oven to 300 degrees F.

    Combine brown sugar, salt, and cornstarch in a small bowl. Pat the salmon dry with paper towels; season flesh side with salt and pepper. Rub each piece with 1/4 of the rub.

    Heat oil in a oven-proof skillet over medium-high heat. Sear salmon, flesh side down, for . Flip and sear with the skin side down for one minute.

    Place in oven for 7 to until fish reaches an internal temperature of 125 degrees at the thickest part. Flesh will still have some translucency .

Chef's Notes

NOTES : This is a great way to get a nice sear on your salmon. The slow cooking in the oven prevents albumin (the white protein substance) from oozing out of the salmon. Albumin is edible - just not very pretty.
