Ingredients

  • 4 cupschicken stock
  • 4 kaffir lime leaves -- cut in strips
  • 4 2- inchpieces lemongrass
  • 1 1/2 Inchesginger root -- peeled and sliced thinly
  • 1/4 cupfish sauce
  • 2 tablespoonslime juice
  • 1 organic chicken breast -- cut into 1-inch cubes
  • 8 fluid ouncescoconut cream
  • 4 small red chile peppers

Instructions

    Heat the stock. Just before it boils, add the lime leaves, lemongrass, ginger root, fish sauce, and lime juice. Stir thoroughly and bring to boil. Add the chicken and coconut cream, then add the chile peppers. Bring back to boil, then lower heat to simmer for about 2 minutes until the chicken cooks through.

    Serve over jasmine or sushi rice.
