Mango Salsa
I wrote this Mango Salsa recipe specifically for my crab cakes, but I often make it to serve with chicken or chips.

Ingredients
- 2 cupsfresh peeled and diced mango
- 1 cuppeeled and diced cucumber
- 2 tablespoonfinely chopped jalapeño
- 2/3 cuppeeled and diced red onion
- 2 tablespoonsfresh lime juice
- 2/3 cuproughly chopped cilantro leaves
- Kosher salt & freshly ground black pepper

Combine the mango, cucumber, jalapeño, red onion, lime juice, and cilantro leaves and mix well.
