I wrote this Mango Salsa recipe specifically for my crab cakes, but I often make it to serve with chicken or chips.

Ingredients

  • 2 cupsfresh peeled and diced mango
  • 1 cuppeeled and diced cucumber
  • 2 tablespoonfinely chopped jalapeño
  • 2/3 cuppeeled and diced red onion
  • 2 tablespoonsfresh lime juice
  • 2/3 cuproughly chopped cilantro leaves
  • Kosher salt & freshly ground black pepper

Instructions

    Combine the mango, cucumber, jalapeño, red onion, lime juice, and cilantro leaves and mix well.

    Season with salt & pepper, to taste.
