Golden pita bread transforms into a crispy canvas for sweet cherry tomatoes, creamy mozzarella, and ribbons of salty prosciutto. My go-to lunch when I'm craving pizza but want something lighter and faster than traditional dough.

Ingredients
- 2 6- inchwhole wheat pita bread
- 1/2 cupcherry tomatoes
- extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 1 ouncefresh mozzarella (shredded)
- 1 tablespoongrated Parmesan cheese
- 1 ounceshredded prosciutto
Instructions

Preheat oven to 400° F. Toss the cherry tomatoes in oil on a baking sheet and season with salt and pepper. Roast until the tomatoes are splitting and starting to brown, .

Spread the tomatoes on the pita. Top with the mozzarella, Parmesan, and prosciutto. Bake until the cheese is bubbly and serve.
