Silky, cloud-like curds form in minutes, creating the freshest ricotta with just a hint of lemony brightness. This surprisingly simple technique transforms everyday ingredients into something truly special, perfect for folding into pasta or spreading on warm crusty bread.

Ingredients

  • 2 cupswhole milk
  • 1/3 cupplain Greek yogurt
  • 2 teaspoonsfresh lemon juice
  • 1/8 teaspoonKosher salt

Instructions

    Mix all of the ingredients together with a whisk in a microwave-safe bowl.

    Gently lift the curds (solids) out of the whey (liquids) and place in a cheesecloth or cheese-bag-lined strainer. Drain for , until you reach the desired consistency.
