  • 1 tablespoonbutter
  • 2 cupscrimini mushrooms (sliced)
  • 1/4 cupgreen onion (diced)
  • 2 tablespoonsfresh mint leaves
  • Kosher salt (to taste)

Instructions

    In a medium saucepan, bring 4 cups of water to a boil. Add the frozen peas—Cook for . Drain and put in a bowl.

    Heat butter in a medium-sized skillet over medium-high heat. When foam subsides, add the mushrooms and green onions. Cook for until mushrooms are beginning to brown. Add in the peas and mint. Cook for longer. Season with salt.
