Ingredients

  • 2 cupsfrozen peas
  • 1 tablespoonbutter
  • 2 cupscrimini mushrooms (sliced)
  • 1/4 cupgreen onion (diced)
  • 2 tablespoonsfresh mint leaves
  • Kosher salt (to taste)

Instructions

    In a medium saucepan, bring 4 cups of water to a boil. Add the frozen peas—Cook for 1 minute. Drain and put in a bowl.

    Heat butter in a medium-sized skillet over medium-high heat. When foam subsides, add the mushrooms and green onions. Cook for 4 minutes until mushrooms are beginning to brown. Add in the peas and mint. Cook for 1 minute longer. Season with salt.
