Oatmeal Dollar Pancakes
You can certainly make these pancakes bigger, but they are such a treat small, and you get to eat so many of them! You'll love the oatmeal texture and the hint of cinnamon.

Ingredients
- 1/4 cupflour
- 1 cupquick-cooking oats
- 1 tablespoonsugar
- 1/2 teaspoonbaking powder
- 1/2 teaspoonbaking soda
- 1/4 teaspoonground cinnamon
- 1/8 teaspoonKosher salt

- 1 cupbuttermilk
- 2 tablespoonsmelted butter or canola oil
- 1 large egg

- canola cooking spray
- 1 cupberries
Instructions

Place all dry ingredients in a medium-sized bowl and stir with a whisk to combine.

Combine buttermilk, butter, and the egg in a small bowl. Add to the flour mixture, stirring just to combine.

Heat a nonstick skillet or a griddle over medium heat. Coat the pan with cooking spray. Spoon 2 tablespoons of batter onto the skillet for each pancake. Turn when the tops are bubbly and the bottoms brown.
