Golden-brown and impossibly crispy on the outside, fluffy as clouds within — these are the oven fries that converted me from a deep-fryer devotee. The secret is high heat and patience, creating the perfect side for everything from weeknight burgers to Sunday roast chicken.

Preheat oven to 425°F.

Cut potatoes into wedges and put in an ice bath for at least and up to 4. Drain the potatoes and dry with paper towels.
