
Sesame Soba Noodles with Broccoli and Chicken

Ingredients
- 1 8 ouncepackage uncooked soba noodles
- 10 ouncesbroccoli florets
- canola oil spray
- 12 ounceschicken tenders
- Kosher salt and freshly ground black pepper
- 3 tablespoonsrice wine vinegar
- 2 tablespoonsdark sesame oil
- 2 tablespoonstamari soy sauce
- 2 tablespoonscreamy peanut butter
- 1 teaspoontoasted sesame seeds
- 1 teaspoonbrown sugar
- 1 clovegarlic -- minced
- 3 green onions -- chopped
- 1 teaspoontoasted sesame seeds

Bring a large pan of water to a boil. Add the soba; cook 3 minutes. Add the broccoli florets. Cook until soba noodles are al dente. Drain.

Heat a grill pan over medium-high heat. Coat the pan with cooking spray. Sprinkle the chicken with salt and pepper and grill it for 4 minutes on each side until cooked through thoroughly. Remove the chicken from the pan and slice into 1-inch pieces.

While the chicken is cooking, whisk together the sauce ingredients, vinegar through garlic in a medium-sized bowl. Toss in the chicken, broccoli, and noodles.

Serve garnished with sesame seeds and green onions.
