  • 6 ouncesmanchego (Garrotxa or tetilla (cut into 1/2-inch slices))
  • 1 tablespoonextra-virgin olive oil
  • 1 clovegarlic (peeled and sliced)
  • 1 tablespoonsherry

    Heat the oil and garlic in a small skillet over low heat. Remove the garlic with a slotted spoon when it becomes golden brown, . Reserve the garlic.
