
Melted Sherry Spiked Manchego
Nutty Manchego melted with a hint of crunchy garlic and sherry is best served quickly and lovely with tomato jam and crusty bread

Ingredients
- 6 ouncesmanchego (Garrotxa or tetilla (cut into 1/2-inch slices))
- 1 tablespoonextra-virgin olive oil
- 1 clovegarlic (peeled and sliced)
- 1 tablespoonsherry

Heat the oil and garlic in a small skillet over low heat. Remove the garlic with a slotted spoon when it becomes golden brown, 2 minutes. Reserve the garlic.

Add the cheese in a layer, and fry until warm and soft, 2 to 3 minutes. Turn off the heat.

Add in the sherry and cover. Continue to heat just until the cheese is soft and gooey. Remove the pan from the heat. Top the cheese with the reserved garlic. Serve the cheese right out of the pan or slide onto a serving dish. Serve with crusty bread and tomato jam.
