  • 170 gramswarm water -- between 110 and 115 degrees
  • 1 1/4 teaspoonsinstant yeast
  • 1 tablespoonhoney
  • 170 gramssourdough discard
  • 240 gramsall-purpose flour
  • 27 gramsdark rye flour
  • 2 tablespoonspotato flour
  • 2 tablespoonsnon-fat dry milk
  • 1 1/2 teaspoonsKosher salt
  • 1/4 cupunsalted butter

    Dissolve the yeast in the water and stir in the honey. Let stand until a thin layer of foam forms on the top, .

    Weigh and combine your dry ingredients in a medium-sized bowl.

    Put the yeast mixture and sourdough starter in the bowl of your stand mixer fitted with a dough hook. Combine on slow speed for . Add the flour mixture and mix on low until a sticky cohesive dough forms for 2 to .

    Stop your mixer, and scrape the bowl if necessary. Add the butter and mix at medium to medium-high speed for . The dough should be smooth and stretchy.

Fold over on itself to de-gas the dough and place it on a lightly floured work surface. Divide the dough into six equal pieces weighing 120 grams each.
