Ingredients
- 1 8- ouncepotato
- 1/3 cupshredded sharp Cheddar cheese
- 1/4 cupcanned black beans (drained and rinsed)
- 1 small tomato (chopped and tossed with 1/4 teaspoon chili powder)
- 1 tablespoonchopped green onion
- Kosher salt and freshly ground black pepper to taste
- 1 tablespoonlowfat Greek yogurt

Preheat oven to 375° F.

Bake potato for 1 hour or until an inserted paring knife meets no resistance. Remove from the oven.

Cut baked potato open top with the other ingredients.
