Ingredients

  • 1 8- ouncepotato
  • 1/3 cupshredded sharp Cheddar cheese
  • 1/4 cupcanned black beans (drained and rinsed)
  • 1 small tomato (chopped and tossed with 1/4 teaspoon chili powder)
  • 1 tablespoonchopped green onion
  • Kosher salt and freshly ground black pepper to taste
  • 1 tablespoonlowfat Greek yogurt

Instructions

    Preheat oven to 375° F.

    Bake potato for 1 hour or until an inserted paring knife meets no resistance. Remove from the oven.

    Cut baked potato open top with the other ingredients.
