  • 2 limes (juiced)
  • 4 scallions (slice and separate white from green parts)
  • 3 cupsfresh corn kernels
  • 2 13.5-ounce canscoconut milk
  • 4 teaspoonsfish sauce
  • 1/4 teaspoonKosher salt
  • 2 cupsfresh corn kernels
  • 1/4 teaspoonred pepper flakes
  • 2 Kaffir lime leaves (sliced)
  • red pepper flakes
  • cilantro leaves (optional)

    In a blender, blend the lime juice, white slices of scallions, corn kernels, coconut milk, fish sauce, and Kosher salt until smooth. Push through a fine strainer into a 4-quart saucepan.

    Stir in the remaining corn, red pepper flakes, and lime leaves. Heat just to a simmer, turn off the heat. Cool for , then chill. Serve cold. Garnish with green parts of scallions, red pepper flakes, and cilantro leaves.
