  • 3 tablespoonsred or brown miso
  • 1 12 to 16 ounceblock extra firm tofu

    Line a baking sheet with several layers of paper towels. Drain the tofu and cut it crosswise into four pieces. Place the tofu on the paper towels, cover the slabs with more paper towels and place a baking sheet on top. Put a heavy pan or weight on the baking sheet. Press the tofu for .     While the tofu presses, mix the tamari and miso in a shallow pie plate or dish. Cut the tofu pieces into 1-inch cubes. Place the tofu in the tamari mixture, turning often, and marinate for .
