Ingredients

  • 2 poundsRoma tomatoes (cored and cut into 1/2inch dice)
  • 1/2 cupdark brown sugar
  • 2 tablespoonsapple cider vinegar
  • 1 tablespoongrated ginger root (from peeled 1-inch piece)
  • 1 teaspoonKosher salt
  • 1/2 teaspoonground cumin
  • 1/4 teaspoonsmoked paprika
  • 1/4 teaspoonred pepper flakes
  • 1 2- inchstick cinnamon

Instructions

    Combine all ingredients in a 4-quart saucepan. Over medium heat, bring to a simmer.

    Cook at a simmer, occasionally stirring, until thick and jammy, about 2 hours.

    Refrigerate the tomato jam in jars.
