Ingredients
- 2 poundsRoma tomatoes (cored and cut into 1/2inch dice)
- 1/2 cupdark brown sugar
- 2 tablespoonsapple cider vinegar
- 1 tablespoongrated ginger root (from peeled 1-inch piece)
- 1 teaspoonKosher salt
- 1/2 teaspoonground cumin
- 1/4 teaspoonsmoked paprika
- 1/4 teaspoonred pepper flakes
- 1 2- inchstick cinnamon
Instructions

Combine all ingredients in a 4-quart saucepan. Over medium heat, bring to a simmer.

Cook at a simmer, occasionally stirring, until thick and jammy, about 2 hours.
