Turkey Stuffed Potato

If you're in a pinch, you can always microwave the potato. Make sure you pierce it a few times with a fork. Microwave 4 to 6 minutes on high.

Ingredients

  • 1 8- ouncepotato
  • 2 ouncesshredded turkey breast
  • 1/3 cupsharp Cheddar cheese
  • 1/4 cupdiced tomato
  • 1 green onion (chopped)
  • 2 tablespoonssour cream

Instructions

    Preheat oven to 375° F

    Bake potato for 1 hour or until an inserted paring knife meets no resistance. Remove from the oven.

    Cut the potato in half. Mash in the Cheddar and top with the turkey, tomato, green onion, and sour cream.
