Vegan Cashew Slicing Cheese

I love the flavor of this vegan cheese. You can leave some of the cashews chunky for texture if you like.

Ingredients

  • 3/4 cupraw cashews
  • 1/4 cupnutritional yeast
  • 1 Tbsp.lemon juice
  • 1 tsp.Dijon
  • 1 tsp.kosher salt
  • 2 tsp.agar powder
  • 1 tsp.garlic powder
  • 1/2 cupwater

Instructions

    Soak cashews 3 hours in large bowl of water. Drain, and return to bowl. Add nutritional yeast, lemon juice, mustard, salt, and garlic powder to bowl; set aside.

    Whisk the agar and garlic powder into the water in a saucepan, and bring to a boil over medium heat. Simmer 2 to 5 minutes, or until liquid thickens and agar dissolves, whisking constantly.

    Add agar mixture to cashew mixture. Blend with immersion blender or in a blender until smooth. Pour into a small cheese mold or loaf pan. Chill 1 hour.
