
Vegan Pizza Burgers
I grew up with pizza burgers. I love this vegan version because it has even more flavor than and better texture than a beef version.

Ingredients
- 1 tablespoonextra-virgin olive oil
- 1/4 cupminced yellow onion
- 3 clovesgarlic (minced)
- 1 15- ounce canchick peas (rinsed, drained, and dried on paper towels)
- 2 tablespoonsextra-virgin olive oil
- 1/4 cupvegan Parmesan
- 2 teaspoonsItalian seasoning
- 1/4 cupfinely chopped Italian parsley
- 1 cupcoarsely ground cornflakes
- 1/2 cuppizza sauce
- 1/4 teaspoonKosher salt
- 1/4 teaspoonfreshly ground black pepper
- 2 tablespoonscanola oil

- vegan Parmesan

Preheat oven to 400º F.

Heat the oil in a medium-sized skillet over medium heat. Sauté the onion and garlic until soft and transparent, frequently stirring, for 3 to 4 minutes. Transfer to a medium-sized bowl.

Add the chick peas and mash with a fork. The mixture should be coarse.

Add the olive oil, Parmesan, Italian seasoning, parsley, cornflakes, pizza sauce, salt, and pepper. Stir to combine. The mixture will look crumbly.

Form into four tightly-packed 1/2 cup patties.

Heat canola oil in a large oven-proof skillet over medium heat. Gently place the burgers in the pan and cook, not turning, for 1 to 3 minutes until browned. Flip the burgers, and cook for 1 to 2 minutes to brown the second side.

Put the skillet in the oven for five minutes to heat the burgers through.

Serve topped with hot pizza sauce and sprinkled with vegan cheese.
