Walnut Chickpea Basil Croquettes

Walnuts and chickpeas combine to make a firm croquettes with a lovely crust.

Ingredients

  • 2 clovesgarlic (smashed)
  • 1/2 medium onion (roughly chopped)
  • 1 3/4 cupschickpeas (cooked until soft or canned)
  • 1/4 cupchopped basil leaves
  • 1/2 cupfresh bread crumbs
  • 3/4 cupwalnuts - (toasted and chopped fairly fine)
  • 3 large eggs (lightly beaten)
  • 1 1/2 teaspoonsKosher salt
  • freshly ground black pepper
  • 2 tablespoonscanola oil

Instructions

    In a food processor, pulse garlic and onion until chopped coarsely and evenly. Add chick peas, basil, and bread crumbs and pulse until just combined.

    Transfer mixture to a bowl and stir in walnuts and egg. Stir in salt, tasting to adjust the amount. Add pepper to taste. Mix until well-combined.

    Form mixture into 6 patties.

    In a large, heavy-bottomed skillet, heat oil over moderate heat until hot but not smoking; cook patties until golden brown, about 4 minutes on each side.
