
Cucumber Jalapeno Paletas
Mexican Paletas are adventurous popsicles. This particular recipe has delighted many of my clients and family members over the years. They are the perfect end to a successful taco night or a brilliant and unexpected palate cleanser.

Ingredients
- 3 cupscucumber (peeled and cut into 1/2" cubes)
- 2/3 cupsugar
- 1/3 cuplime juice (freshly squeezed)
- 1 medium-sized jalapeño (seeded, deveined, and minced)

Instructions

Place all ingredients in a blender or food processor and process until smooth.

Fill molds, leaving 1/4" to 1/2 " from the top to allow for expansion. Place the tops on the molds and insert "popsicle" sticks. Freeze for or until frozen.

Un-mold by dipping in hot water for 2 seconds and squeezing the sides of the mold.
