Strawberry Chicken Salad

Strawberry Chicken Salad makes a lovely light lunch. I reserve this salad for hot summer days in August when strawberries are fresh and flavorful at the farmer's markets.

Ingredients

Dressing

  • 2 tablespoonsred wine vinegar
  • 2 tablespoonsextra-virgin olive oil
  • 3 tablespoonsstrawberry fruit spread
  • 1/4 teaspoonKosher salt
  • 1/8 teaspoonfreshly ground black pepper

Salad

  • 4 cupstorn greens
  • 4 cupsarugula
  • 2 cupsquartered strawberries
  • 1/3 cupthinly sliced red onion
  • 2 cupscubed or shredded chicken breast
  • 1/4 cuptoasted unsalted cashews
  • 1/2 cupcrumbled blue cheese

Instructions

    Whisk together dressing ingredients.

    Combine the greens, arugula, strawberries, onion, and chicken in a large salad bowl. Divide among four plates.

    Top each serving with cashews and blue cheese. Drizzle with dressing.
