This simple salad is one of my favorite weekday lunches. The Dijon makes the salad a little spicy heat

Ingredients

  • 4 ouncescanned water-packed tuna (drained)
  • 1/4 cupchopped celery
  • 1 teaspoonminced shallot
  • 1 tablespoonmayonnaise
  • 1 tablespoonplain Greek yogurt (can be non-fat for fewer calories)
  • 2 teaspoonsDijon mustartd
  • Kosher salt and freshly ground black pepper (to taste)
  • 1 cupbaby greens
  • 1 small tomato (sliced)

Instructions

  1. 1

    Combine the tuna, celery, shallot, mayonnaise, yogurt, and mustard in a small bowl. Season with salt and pepper.

    Serve over the greens and tomato.
