Ingredients

  • 1 6- ouncecan water-packed tuna (drained)
  • 1/2 cupdiced cherry tomatoes
  • 1 Tablespoonminced red onion
  • 1 hard-boiled egg (chopped)
  • 1 tablespoonvinegar or water-packed capers (drained)
  • 1 tablespoonapple cider vinegar
  • Kosher salt and freshly ground black pepper (to taste)
  • 1 apple (cored and sliced)
  • 4 large green or red lettuce leaves

Instructions

    Combine tuna, tomatoes, onion, egg, capers, and vinegar in a small bowl—season with salt and pepper.

    Arrange two lettuce leaves on each of two plates. Divide the apple slices among the lettuce leaves. Divide the tuna mixture among the lettuce leaves, and serve.
