Tuna Toast
I love this simple, no-mayo tuna salad topping. If I have my favorite Spanish tuna (Ortiz) packed in olive oil on hand, I omit the olive oil.

Ingredients
- 1 6 ounce canwater-packed tuna
- 1 cupdiced cherry tomatoes
- 1 tablespoonminced red onion
- 1/4 cupfeta cheese
- 1/4 cupdiced green or black olives, or capers
- 1 tablespoonlemon juice
- 1 tablespoonextra-virgin olive oil
- Kosher salt and freshly ground black pepper to taste
- 2 slicestoasted whole grain toast

Combine tuna, tomatoes, onion, feta, olives, lemon juice, and olive oil in a small bowl.
