Tuna Toast

I love this simple, no-mayo tuna salad topping. If I have my favorite Spanish tuna (Ortiz) packed in olive oil on hand, I omit the olive oil.

Ingredients

  • 1 6 ounce canwater-packed tuna
  • 1 cupdiced cherry tomatoes
  • 1 tablespoonminced red onion
  • 1/4 cupfeta cheese
  • 1/4 cupdiced green or black olives, or capers
  • 1 tablespoonlemon juice
  • 1 tablespoonextra-virgin olive oil
  • Kosher salt and freshly ground black pepper to taste
  • 2 slicestoasted whole grain toast

Instructions

    Combine tuna, tomatoes, onion, feta, olives, lemon juice, and olive oil in a small bowl.

    Spread the mixture on toast and serve.
