Ingredients: 4 medium yukon gold potatoes (peeled and sliced thin with a mandolin); 1 large leek (white and light green part only - cleaned halved and sliced); 2 teaspoons thyme leaves -- or chopped tarragon leaves; 2 tablespoons butter; 1/4 cup flour; 3/4 cup chicken stock; 1 cup cream; Kosher salt and freshly ground black pepper; 1 1/2 cups grated Gruyere Cheese ( Emmenthaler is also a good choice)
