About Spicy Toasted Squash Seeds

Winter squash, such as pumpkins, butternut squash, acorn squash yield tasty seeds for roasting. Please don’t throw the seeds away. Yes, they are a chore to clean, but it’s worth the effort, especially when you toss them with spices that usually are on hand in everyone’s cabinet.

The smell of cinnamon makes the brain associate with sweetness. This particular combination of spices smells a bit sweet and definitely spicy when roasting. Make sure you roast them until they are nicely browned. That will ensure that they are delicious and crunchy.

Spicy Toasted Squash Seeds

Spicy Toasted Squash Seeds are a crunchy, delicious, and healthful snack.

Ingredients
  

  • 1/2 cup cleaned and rinsed winter-squash seeds -- drain on paper towels
  • 2 teaspoons extra-virgin olive oil
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon garlic powder

Instructions
 

  • Preheat oven to 300º F. Line a baking sheet with aluminum foil or parchment paper.
  • Combine the seeds with olive oil and spices.
  • Bake for 30 to 40 minutes, stirring every 10 minutes until the seeds are as brown and crunchy as you like. Cool. Serve or store in an airtight container for up to 5 days.
